Filippo Berio Recipe of the Day – Butterfly Lamb

Try this recipe from, Filippo Berio, the makers of one of Italy’s favourite olive oils.

Italian Butterfly Lamb

Serves 6-8

Preparation time: 20 minutes, plus overnight marinating

Cooking time: 40 minutes, plus 15 minutes standing

1 leg of lamb, approx 1.8 kg/4lb, boned

3 large sweet onions

Filippo Berio Olive Oil

Sun-Dried Tomato and Balsamic Vinegar Marinade:

120ml/8 tbsp Filippo Berio Olive Oil

3 garlic cloves, crushed

4 tbsp sun-dried tomato paste

4 tsp dried oregano

5 tbsp balsamic vinegar

1 tsp salt

Method:

1. Open out the boned leg of lamb, discard excess fat, and cut through the centre slightly so the meat can be laid out in a long flat piece. Put into a large dish.

2. Mix the marinade, and pour over the lamb, turning it so it is covered all over. Cover and refrigerate overnight.

3. Bring the lamb to room temperature before cooking. Peel and thickly slice the
onions, brush with oil on both sides.

4. Place the lamb on a medium hot barbecue, and cook for 20 minutes each side. Transfer the lamb to a carving board, cover with foil and stand for 15 minutes before carving.

5. Meanwhile, cook the onion slices on the barbecue and serve with the lamb.

Cook’s tip: Ask the butcher to bone the lamb or buy a joint that has been boned and rolled, then remove string and unroll.

Medieval apples are healthier – reveals new research

Organically grown apples from the 12th Century have higher levels of health- giving plant compounds than modern non organically grown rivals, such as Granny Smith, Royal Gala and Cox. From peel to core, the medieval apple outperformed 14 other competitors.

Pharmacist Michael Wakeman will announce the findings of his research at the Royal Pharmaceutical Society Annual Conference in Manchester. He has been researching the health giving properties of apples for a decade at secret orchards around the country, where horticulturists have been bringing back to life 300 varieties of ancient English apple.

The findings of the study directly counter the claims of the Food Standard Agency who claim that organic food is no healthier than standard food. In fact, of all the organic varieties, the medieval Pendragon was the best apple variety and contained 7 of the 8 kinds of healthy components at the highest levels. In contrast, the non-organic apples consistently had low levels and less major healthy components in both the flesh and the peel.

Runners up to Pendragon were an organically grown variety of Golden Delicious, a cider apple called Collogett Pippin, and old Cornish and Devon apple varieties, Ben’s Red and Devonshire Quarrenden.

Actress Stephanie Beacham campaigns for hearing loss “stars”

London: Actress Stephanie Beacham has launched a new award to highlight the achievements of those who are deaf and partially deaf.

And at the first ceremony of the Sound Barrier Awards, sponsored by UK company Specsavers and Hearing Dogs for Deaf People people from across the UK were congratulated for their achievements.

Stephanie, who is partially deaf in one ear, and has gone on to have a successful acting career including roles in blockbusters such as Dynasty, said that deafness was not a disability but a frustration which it is possible to overcome.

Sixty-six Adam Wilson rom East Grinstead, Surrey is named the Sound Barrier Star of the Year 2009. He is pictured with his hearing dog Baxter and Stephanie.

The national competition run by Specsavers hearing centres in association with Hearing Dogs for Deaf People, recognises achievement in the deaf or hard of hearing. Mr Wilson, 66 lost his hearing due to osteosclerosis at the age of 32. Losing his hearing affected him deeply and he became reclusive and felt isolated.

Says Mr Wilson: ‘I went through a really low point. I could have given in but I picked myself up and decided to face my hearing loss head on.’

Adam now gives regular talks about hearing loss in support of charity Hearing Dogs for Deaf People. It was after giving a talk to the Crawley Air Cadets that the young people he spoke to decided to nominate him for a Sound Barrier Star Award.

Actress Stephanie Beacham presented Mr Wilson with his award at the ceremony in London on Thursday 17 September. She says: ‘Adam is a thoroughly deserving winner. His story is a perfect example of why we set up the awards up in the first place and it was a real delight to meet him.’

Mr Wilson says: ‘I’m delighted to have had the opportunity to do more in raising deaf awareness – this is really what this is all about. Teenagers get such a bad press and it is a lovely feeling to have got through to them.’

The award Mr Wilson received also included a prize of a luxury two-week all-inclusive cruise from Phoenix Holidays, the UK’s leading river cruise specialist, and £1,500 in vouchers from Specsavers.

Air Cadets CO Helen Dudley says: ‘The children were so moved by Adam’s story. He is a remarkably brave individual and an excellent role model.’

Mr Wilson has also written a book in aid of Hearing Dogs for Deaf People in which his hearing dog Baxter tells stories. He has sold hundreds of copies and aims to make up to £5,000 for the charity.

Mr Wilson continues: ‘Specsavers has been fantastic in raising awareness of the challenges people face with hearing loss. I remember one incident before I got Baxter. When a fire alarm went off at a hotel I was in, I couldn’t hear it and only woke up by the flashing lights of the fire engine.’

Mr Wilson attended the grand final with four other national finalists (pictured) from across the UK. They were interviewed by judges Stephanie Beacham, Julie Perkins from Specsavers, Judy Cogan and Jenny Smith from Hearing Dogs for Deaf People.

Specsavers donated £5 to Hearing Dogs for Deaf People for every entry. Hearing dogs help transform the lives of their deaf owners by alerting them to sounds that those with good hearing take for granted, allowing them greater independence, confidence and security.

Having selected my preferred treatment package from a substantial wellness program menu some weeks prior to arrival, I was pleased to find the standard of practitioners even more sensational than I’d been led to expect. Kamalaya offers solutions for detox, yoga, stress and burnout, fitness and weight control. I chose the Asian Bliss package from the Stress and Burnout range but had I simply been looking for a relaxing and restorative holiday, I needn’t have committed to a program at all, and could have just soaked up the environment and complimentary inclusions like naturopathic consultations and holistic activities including yoga, meditation, tai-chi and pilates.

My chosen package cost me 61,000 baht (around 1,086 GBP’s) for 7 days but was the best decision I could have made. Disrobing constantly, drinking countless cups of delicious home-made mulberry tea before and after sessions, I was pampered and pummeled several times a day during 60 or 90 minute sessions which ranged from Vital Essential Oil, Thai and Marma Point (trigger point) massages to Reiki and ancient Ayervedic treatments like Shirodara ( a stream of warm, medicated oil is poured continuously on the forehead) and Chi Nei Tsang (Taoist abdominal massage).

One of my practitioners by the name of Saimy had the best hands I had ever encountered. Perhaps I shouldn’t have been surprised given his background as an Indian masseur of some 30 years standing who’d learnt and perfected his craft from his grandfather who was the village healer, since the tender age of ten. As each treatment surpassed the one before, it didn’t take long before I began to slip into what for me was an extremely foreign state of relaxation akin to being semi comatose.

Usually highly active to the point of hyperactivity, I was hardly able to recognize myself as I dragged my weary body up and down countless steps between the pool, the restaurant, the wellness centre and the yoga pavilion for the next few days. Lethargic and bloated despite an over-indulgence in the healthiest food I’d ever eaten, I sought advice from resident naturopath Samantha who told me my state was perfectly normal as the mind begins to unwind and relax and the body adjusts to the pace and to the intake of so much raw food.

Indeed, it’s the food that attracts so many people to Kamalaya. While over sixty per cent of guests come on their own in order to undergo detox therapy, Kamalaya’s unique philosophy is that one should detox with abundance and not starvation. As a result, Chef Kai Mueller continually creates the most amazing menus which include mouth-watering delicacies like lotus root and herbed mangosteen salad with wheatgrass spirulina dressing and Thai herb cured wild salmon sashimi on buckwheat with rocket goat cheese. There’s even a chocolate soufflé!

Guests have the choice of selecting meals from a specific detox menu which features low inflammatory, low allergenic and low GI vegetarian dishes, or from the broader menu, which changes with the seasons and features fresh, local and where possible organic produce.

Here, food is the medicine of choice, and much of what’s on offer is healing in function and tantalising in form. By day four, my stomach had settled right down and I began to regain lost energy. The fresh juices, signature tonics and herbal teas had begun to work their magic and I realized that while each is bursting with nutrients, medicinal properties and taste-bud tempting goodness, it’s often the unique combinations here that keep visitors returning time and time again.

No matter what accommodation option you choose here, you’re bound to find life soothing and serene. We stayed in a magnificent villa perched in the tree tops overlooking both the ocean and the two infinity pools that have been hewn out of rock with a freshwater spring running into them. I particularly loved our open-air bathroom that resembled a mud brick cocoon, and found it truly liberating to take a shower without the confines of walls or screens.

As accommodation options are additional to the price of wellness programs, there are several to be considered. But no matter if you select a room for around 7900 baht (141GBP’s), a suite for 11,900 baht ( 212.50 GBP’s) or a rocktop, pool or beachside villa for 29,000baht (516.50 GBP’s), you’re bound to enjoy your experience. Kamalaya is an inclusive rather than an exclusive resort. It doesn’t boast ultimate luxury or super slickness, but it’s warm, caring, supportive – and very comfortable indeed.

MS sufferer campaigns to increase awareness of addiction drug

MS sufferer Linda Elsegood (pictured right) could not see or hear properly and had to use a wheelchair before she discovered Low Dose Naltrexone (LDN). Now she has launched her own campaign to increase awareness of the possible use of the drug in MS treatment.

Linda was so crippled by the disease that she was barely able to attend her daughter’s wedding. Then Linda’s life was transformed when she discovered LDN via the internet.

“The MS was causing me excruciating pain. It started with a tingling on my tongue, then I just couldn’t get out of bed and was sleeping for 20 hours a day,” says Linda, from Norfolk.

“I was finally diagnosed with Relapsing and Remitting MS. In October 2003, my neurologist told me there was nothing more that could be done for me.”

From that moment Linda’s deterioration was rapid until she started taking LDN in December 2003 and noticed improvements after three weeks. This continued for two years and then Linda’s symptoms stabilised.

LDN uses approximately 1% of the Naltrexone dose approved by the Food and Drug Administration (FDA) for treating alcoholism and drug addiction.

“I still have MS but life is good,” says Linda. “I can set targets and achieve them and look forward to the future.

“The other prescribed treatments had horrendous side effects and cannabis was not an option for me.

“After my success with LDN, I wanted everyone to know about it. I formed the LDN Research Trust in May 2004 and now spend all my time helping others while trying to raise funds for clinical trials.”

“Naltrexone is a generic drug that is out of patent, so very cheap to produce. The downside of that is that drug companies will not fund trials as there is no money to be made.

“I’d like the Government to fund clinical trials as I believe this could change the lives of thousands of people in the UK who suffer not only from MS but also Crohn’s, cancer and other diseases.”

Nescafé launches first anti-ageing coffee

London: A new type of coffee which contains high levels of naturally occuring polyphenol antioxidants has been launched in the UK by Nescafé.

The new coffee, Nescafé Green Blend, has a combination of traditionally roast beans for the traditional flavour and unroasted beans which contain exceptionally high levels of a plant antioxidant called polyphenols.

This antioxidant helps the body fight off degeneration caused by free radicals – damaging molecules which are a by-product of living.

Coffee, once a health paraih, is now credited with all kinds of health benefits including helping to prevent liver and Alzheimer’s disease.

The goodness of NESCAFÉ Green Blend lies within the unroasted green coffee beans. They are naturally rich in polyphenol antioxidants which can help protect the body’s cells from day to day damage. Polyphenol antioxidants are also found in green tea and cocoa.

Vitamin C protects skin from cancer

London: A joint study by scientists in the UK & Portugal has discovered a new role played by Vitamin C in protecting the skin from cancer and sun damage.

Researchers at the University of Leicester and Institute for Molecular and Cellular Biology in Portugal studied new protective properties of vitamin C in cells from the human skin, which could lead to better skin regeneration.

The work, by Tiago Duarte, Marcus S. Cooke and G. Don Jones, found that a form of Vitamin C helped to promote wound healing and also helped protect the DNA damage of skin cells. Their findings have been published in the journal Free Radical Biology and Medicine.

This report is the latest in a long line of publications from these researchers, at the University of Leicester, concerning vitamin C. Previously, the group has published evidence that DNA repair is upregulated in people consuming vitamin C supplements. The researchers have now provided some mechanistic evidence for this, in cell culture, using techniques such as Affymetrix microarray, for looking at gene expression, and the ‘Comet’ assay to study DNA damage and repair.

Tiago Duarte, formerly of the University of Leicester, and now at the Institute for Molecular and Cellular Biology in Portugal, said: “The exposure to solar ultraviolet radiation increases in summer, often resulting in a higher incidence of skin lesions. Ultraviolet radiation is also a genotoxic agent responsible for skin cancer, through the formation of free radicals and DNA damage.

“Our study analysed the effect of sustained exposure to a vitamin C derivative, ascorbic acid 2-phosphate (AA2P), in human dermal fibroblasts. We investigated which genes are activated by vitamin C in these cells, which are responsible for skin regeneration.

“The results demonstrated that vitamin C may improve wound healing by stimulating quiescent fibroblasts to divide and by promoting their migration into the wounded area. Vitamin C could also protect the skin by increasing the capacity of fibroblasts to repair potentially mutagenic DNA lesions.”

Even though vitamin C was discovered over 70 years ago as the agent that prevents scurvy, its properties are still under much debate in the scientific community. In fact, the annual meeting of the International Society for Free Radical Biology and Medicine, which will be held this year in San Francisco (USA), will feature a session dedicated to vitamin C, entitled “New discoveries for an old vitamin”.

Dr Marcus S. Cooke from the Department of Cancer Studies and Molecular Medicine and Department of Genetics, at the University of Leicester, added: “The study indicates a mechanism by which vitamin C could contribute to the maintenance of a healthy skin by promoting wound healing and by protecting cellular DNA against damage caused by oxidation”. “These findings are particular importance to our photobiology interests, and we will certainly be looking into this further”.

These results will be of great relevance to the cosmetics industry. Free radicals are associated with premature skin aging, and antioxidants, such as vitamin C, are known to counter these highly damaging compounds. This new evidence suggest that, in addition to ‘mopping up’ free radicals, vitamin C can help remove the DNA damage they form, if they get past the cell’s defences.

The study has the potential to lead to advances in the prevention and treatment of skin lesions specifically, as well as contributing to the fight against cancer.

Recipe of the day – Red Onion Tart

As summer draws to a close there is an array of gorgeous seasonal produce such as blackberries and apples. It’s also the perfect time of year to enjoy onions, as this delicious vegetable is at its freshest and best tasting.

Olive oil specialist Filippo Berio has produced the following mouth-watering recipe which incorporates onions and is ideal as either a snack, starter or as part of a main.

Red Onion Tart

Serves 6-8
Preparation time: 25 minutes
Cooking time: 50 minutes

Pastry:

175g (6oz) plain flour
pinch salt
40g (1½oz) butter
40g (1½oz) white vegetable fat

Filling:

500g (1lb 2oz) red onions
1 tbsp lemon juice
4 tbsp Filippo Berio Mild and Light Olive Oil
2 tsp fresh rosemary spikes, chopped
75g (3oz) black olives, pitted and roughly chopped
3 medium eggs
284 ml carton single cream
Salt and pepper
50g (2oz) Gruyere cheese, grated

Method:

1. To make the pastry, put the flour and salt into a bowl, add the fats and rub in to make a fine crumb texture. Add 3 tbsp cold water and mix with a flat bladed knife until the mixture forms a dough. Gather up and knead lightly until smooth on a lightly floured work-surface.

2. Roll out, keeping a nice round shape, to line a 23cm (9”) diameter metal quiche tin, pricking the base with a fork. Place in the refrigerator for 30 minutes.

3. Meanwhile, peel the onions and slice into thin wedges, then place into a large bowl. Add the lemon juice and toss together. Heat the oven to 200°C/Fan 180°C/400°F or Gas Mark 6.

4. Heat the olive oil in a large frying pan, add the onions and fry very gently for 15 minutes or until softened, stir in the rosemary and allow to cool.

5. Line the pastry case with greaseproof paper and fill with baking beans, then bake for 10 minutes until beginning to colour around the edge. Remove the paper and beans and bake for a further 5 minutes. Remove from the oven and reduce the temperature to 180°C/Fan 160°C/350°F/Gas Mark 4.

6. Place half of the onions into the flan case and spread evenly then scatter over half of the olives and half of the cheese.

7.Beat the eggs with the cream, and season. Pour three quarters over the onions then top with the rest of the onions, remaining egg mixture, olives and cheese. Bake for about 20 minutes, or until lightly golden.

Can Yoga stop you ageing? by Patricia Ezechie

London: In a society obsessed with looking young and where youth and beauty are prized above all other attributes, it is not surprising to learn that more than 22% of women in Europe use anti-ageing skin creams every week, spending billions of pounds every year on treatments and preparations in the hope that any signs of ageing can at the very least be halted if not reversed.

With more and more people also viewing cosmetic surgery and non surgical interventions like botox, fillers, peels and plumpers as essential tools in the battle against the ravages of time, could a practice as simple (and inexpensive) as yoga be the answer? Can yoga halt and maybe even reverse the ageing process?

Before you start reaching for the phone to cancel that botox appointment while simultaneously hurling your eye wateringly expensive skin preparation into the bin lets agree on what constitutes ageing. Is ageing the fact that your breasts and bottom are not quite as pert as they used to be, or is it that when you smile you have laughter lines? Is it the fact that your waist is not quite as waif like as it once was, or that when you look in the mirror these days it’s seems to be your mother looking back at you?

I would agree that all of the above are physical manifestations of the ageing process, but only part of the picture with the focus being purely on the external. Is it these physical changes or the number of years you have been around that should define how ‘old’ you are or feel?

The Eastern view of age is very different. In Yoga it is the age of the spine, not the number of years (or pertness, or evidence of wrinkles) that determines an individual’s age. It is the elasticity and flexibility of the spine, the tone of the tissues, ligaments joints and nerves and the relative smooth functioning and health of the bodies systems that determines age.

Before you groan and switch off please note that an added benefit of increased mobility and flexibility is increased tone (pertness), increased blood supply to all of the bodies organs (including the skin which is one of the largest organs in the body leading to plumpness and firmness) and improved posture (strengthened and toned abdominals and back). Yes, the regular practice of yoga does provide all these benefits.

Spinal health is key in the battle against age. The spine, made up of 33 irregularly shaped bones (or vertebrae), intervertebral discs, facet joints, muscles, ligaments, tendons, nerves, cord and canal act as a strong yet flexible column and support for the whole body, providing and enabling the power of movement and bearing the weight of all the organs and appendages attached. When practicing yoga, the joints of the body are moved through their full range of motion, encouraging mobility and easing pressure.

The gentle stretching during asana practice (this is the physical element of yoga), releases muscle tension, stretches the joints causing the secretion of synovial fluid into the joints keeping them healthy and supple resulting in reduced stiffness preventing conditions such as arthritis and helping to improve the condition if it already exists (by very gentle practice with a qualified and experienced teacher).

Regular and continued practice of asana encourages strength and endurance, leading to increased tone in all the muscles of the body, improved blood circulation with the added benefit of the focusing on the breath helping to soothe and calm the nervous system.

The beauty of the practice of yoga is the more continued and sustained the practice the more cumulative the effects, with the long term benefits including reduced stress and anxiety levels and increased feelings of health and well being. As the nerves of the brain and spine go to every tissue in the body and therefore every tissue in the body depending upon the health of the brain and spine, the importance of the spine in the fight against age becomes apparent.

Healthy and flexible spine, healthy, flexible and youthful body! When we also factor in that during the practice of yoga the skin is continually being stretched causing stimulation of the skin cells and endocrine system resulting in firmer, healthier skin, I think the assertion that yoga can slow and possibly stop the ageing process is no idle boast.

The miracle of yoga is that it is suitable and can be of benefit to everyone, irrespective of age, size, sex, or ability. It is never too late to begin, does not require loads of costly equipment and the benefits can be felt almost immediately. The practice encourages and engenders balance in all things and an awareness of the mind and body that will enable all those who participate to begin to make positive and healthful changes to their lives.

In a society so highly focused on the external it is perhaps a timely reminder that the most sustained and maintainable changes and improvements to the ‘visible’ body are as a result of the correct and efficient working of the internal elements of the body. Get the inside working efficiently and the outside will reflect these changes with lustre and youth.

Getting older is inevitable and no amount of lotions, potions or interventions (surgical or otherwise) can hide the results of age indefinitely. We should be aspiring to embrace the wisdom and freedom that comes with increasing age while maintaining our physical and mental health, fitness and mobility, by practices like Yoga that both nurture and nourish the body and mind.

Can yoga stop you ageing? If youthfulness is defined as energy and vitality, mobility and strength, suppleness and stamina then yes yoga can!

London: Taking a closer look at your bowel habits could lead to improved digestive health.

This week is the UK’s 11th annual Gut Week (24th–30th August), which aims to raise awareness of gut disorders and the importance of good digestive health. The week focuses on giving practical advice and information on how to ensure a healthy bowel movement – which means a closer examination of the nation’s toilet habits.

According to new research by Yakult, Brits are happy to multi-task on the toilet – with many of us texting, surfing the net, and making phone calls. One in twenty even admit eating and drinking on the loo. However the majority of Brits are still unaware that sitting on the toilet for too long could be taking a toll on our health.

Worryingly, 18% of those surveyed have suffered from cramps or pins and needles from sitting on the toilet too long. Despite this, nearly two thirds of polled (65%) are unaware that sitting on the toilet too long can cause haemorrhoids.

Dr. Simon Gabe, Consultant Gastroenterologist at St Mark’s Hospital, Harrow, commented: “Some people do occupy their time on the toilet for all sorts of reasons. Generally this is harmless, but there are a few health risks worth being aware of.”

“There are problems which can arise from spending too long on the toilet, such as haemorrhoids, bleeding and worsening problems with emptying the rectum. More importantly, eating on the toilet runs the risk of contaminating the food with bacteria from the toilet. This may cause a bacterial gastroenteritis, which is an infectious diarrhoea and can be very severe.”

Q How can smoking affect my oral health?

A Most people are now aware that smoking is bad for our health. It can cause many different medical problems and, in some cases, fatal diseases. However, many people don’t realise the damage that smoking does to their mouth, gums and teeth.

Smoking can lead to tooth staining, gum disease, tooth loss and in more severe cases mouth cancer.

Q Why are my teeth stained?

A One of the effects of smoking is staining on the teeth due to the nicotine and tar content. It can make the teeth yellow in a very short time, and heavy smokers often complain that their teeth are almost brown after years of smoking.

Q How will smoking affect my gums and teeth?

A Smoking can also lead to gum disease. Patients who smoke are more likely to produce bacterial plaque, which leads to gum disease. The gums are affected because smoking causes a lack of oxygen in the bloodstream, so the infected gums fail to heal. Smoking causes people to have more dental plaque and for gum disease to progress more rapidly than in non-smokers. Gum disease still remains the most common cause of tooth loss in adults.

Q How is smoking linked with cancer?

A Most people know that smoking can cause lung and throat cancer, but many people are still unaware that it is one of the main causes of mouth cancer too. Every year thousands of people die from mouth cancer brought on by smoking. (See our leaflet ‘Tell Me About Mouth Cancer’)

Q Are there special dental products I can use?

A There are special toothpastes for people who smoke. They are sometimes a little more abrasive than ordinary pastes and should be used with care. Your dentist may recommend that you use these toothpastes alternately with your usual toothpaste. As there are several toothpastes on the market which claim to whiten teeth it is important to look for those accredited by the British Dental Health Foundation. Our logo means that the claims on the packaging are scientifically proven to be correct and the product will be effective at removing staining caused by smoking.

Q What about mouthwashes?

A People who smoke may find they are more likely to have bad breath than non-smokers. Fresh breath products such as mouthwashes may help to disguise the problem in the short term, but will only mask it.

Q How often should I visit my dentist?

A It is important that you visit your dentist regularly both for a normal check up and a full mouth examination so that any other conditions can be spotted early.

You should visit your dentist at least once a year. However, this may be more often if your dentist feels it necessary. People who smoke are more likely to have stained teeth, and therefore may need appointments more often with the dental hygienist.

Q What can my dentist do for me?

A Your dentist will carry out a regular examination to make sure that your teeth and gums and whole mouth are healthy.

Your dentist will also examine your cheeks, tongue and throat for any signs of other conditions that may need more investigation.

They may also be able to put you in touch with organisations and self- help groups who will have the latest information to help you stop smoking.

Q Will I need any extra treatment?

A Your dentist may also refer you to a dental hygienist, for further treatment, thorough cleaning and to keep a closer check on your oral hygiene.

Your dental hygienist will be able to advise you on how often you should visit them, although this should usually be every three to six months.
